With Memorial Day around the corner and July 4th hot on it’s heels, lots of popsicles will be enjoyed as well as a lot of corn on the cob. I always have fun creating my own little flavor adventures out of unexpected ingredient combinations.

Combining corn kernels with creamy coconut milk, blasting it all in the blender and sweetening it with my favorite vanilla stevia is dreamy.

Bet you could have guessed that I have a Popsicle Pinterest board too…
