Curry Turkey Breast with Yogurt Dipping Sauce

Do you want a really quick lunch or dinner?  Well here you have it.  You can prepare this turkey breast in minutes.  I suggest a Big Batch so you have it around for a few meals and mini meals.  It feels so great to be able to reach into your fridge at any time and pull out a tasty healthy meal.  This turkey would be great shredded or cubed on top of your Mixed Green Salad with Goat Cheese Pecan Balls.  It could go on any salad.  The first time I cooked it we had it with my Nutty Coconut Rice and Golden Raisins.  Both the turkey and the rice have curry powder, so they compliment each other nicely.  The coconut, curry combo is a match made in heaven.  The yogurt sauce adds a little something special.

Serve with your favorite veggies or maybe with a bowl of Zucchini Carrot Soup?  No matter what you do you have a simple and easy meal in minutes.  This would be great dipped in ketchup or with a few drops of hot sauce.  You can also make a sandwich with a thin layer of mayo or some of your yogurt sauce.

Curry Turkey Breast with Yogurt Dipping Sauce

  • Always source Organic ingredients when available.

  • Adjust ingredients according to taste and what you have on hand.

Servings: about 4 ounces of turkey per person (this recipe will yield 4 servings)

INGREDIENTS

  • 1 pound organic Turkey Breast about 3/4 inch thick, trimmed of any visible fat
  • Garlic Salt
  • dried or fresh Thyme
  • Curry powder
  • ground Black Pepper
  • Olive Oil or Cooking Spray
  • 1 cup non fat Greek Yogurt
  • Smoked Paprika
  • optional: a handful of chopped fresh Chives (use a kitchen scissor to get a nice “chop”)

METHOD

TURKEY BREAST

  1. Lightly oil or spray a sauté pan. Heat on medium high.
  2. Season turkey breast on both sides with garlic salt, curry powder, thyme and black pepper.
  3. Place in pan, let turkey brown without moving it for about 3 minutes.  Flip and cook for another 3-4 minutes until turkey is cooked through and juices run clear.

YOGURT SAUCE

  1. Combine yogurt with a pinch of black pepper, garlic salt, curry powder and smoked paprika to taste.

SERVING SUGGESTIONS

  • Sprinkle fresh chives and smoked paprika over turkey and yogurt sauce before serving.
