Are you having a picnic, grill fest or potluck for July 4th? If your answer is yes or no this yogurt berry parfait will tempt your sweet buds no matter what. It will also help keep your healthy eating in check. This yogurt parfait is a sweetly satisfying alternative to heavier desserts. With raspberry and blueberry sauces it is sort of like a ice cream sundae, but the yogurt version.

With the abundance of all kinds of sweet and juicy fruits in the markets I had to highlight their star status in these creamy parfaits. We should all give credit where it is due, right? Berries are my favorite fruit. I love their sweet tart flavor and the fact that they are all ready in bite sized pieces.

July 4th creamy & sweet berry sauce yogurt parfait. Summer has been excellent so far. We have been enjoying time as a family. I have been loving more time for recipe development & creativity as I am not on the road to the kids school 3 hours a day!  I just got back from Boulder, CO from a two day photography workshop called Food and Light. Our teachers, White on Rice Couple, Tartelette and Use Real Butter were unbelievable. I will share a post on that next week.  Here is a link for a sneak peek at our Flickr gallery from the event. July 4th creamy & sugar free berry sauce yogurt parfait.

People love to interact with their food, especially dessert.  You can serve these parfaits pre-assembled or your kids and/or guests can make their own.  They can take as much or as little as they want.  Think ice cream dessert bar….just a few less calories.  You can go with small “shooter” sized portions, or bigger ones like these.

Mixed Berry Yogurt Parfaits

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Yield: 4 servings

Mixed Berry Yogurt Parfaits

Ingredients

  • 2 cups fresh Raspberries + some additional for garnish
  • 2 cups fresh Blueberries + some additional for garnish
  • Vanilla Stevia Drops (or your favorite natural sweetener) to taste
  • 6 ounces per serving non-fat Thick Greek Yogurt
  • a few teaspoons cornstarch to thicken berry sauces if needed
  • optional: orange or lemon zest garnish

Method

    Sauce
  • In two separate sauce pans heat berries with 2 tablespoons water in each. Bring to boil over medium high heat. Stir each. Reduce heat to medium, cover and let simmer about 6 minutes until berries become saucy and most have burst open. Remove from heat and purée in a blender. Add a pinch of cornstarch or arrowroot to thicken if desired. Sweeten to taste with stevia.
  • Assembly
  • Add stevia drops to yogurt if desired. Layer sauces and yogurt, making a pattern of yogurt and saucy stripes. Top with additonal berries and zest if desired.
  • Notes
  • Serve your sauce as thick or thin as you wish. Thicken with cornstarch or arrowroot or use more or less water.
  • You do not have to sweeten the yogurt, the berry sauces might be sweet enough for you. Taste a little bit of the yogurt & berry sauce together before you sweeten the yogurt. You also can go without any additional sweetener.
  • You will end up with about 5 ounces of raspberry sauce and about 10 ounces blueberry sauce. Use more or less berries depending on your preference.

I’ve been living outside the US for so long that I’ve almost forgotten how to celebrate our national Independence Day celebration. But I see plenty to celebrate in this recipe! I’ve been on a berry, yogurt, smoothie, smoothie popsicle, lassi kick as summer has heated up, and I love what you’ve done here. A wonderful red, white, and blue treat for all to enjoy!

I’ll certainly say this…everything looks so amazing.
A small disclosure on my part…I’ve had a terrible experience with Stevia and now for some reason do not ever want to use it again. Even though, I may have somewhat used too much of it (my fault)…my brain can’t cancel it out…hence to those that want to avoid my experience…use the Stevia very cautiously.
Everything else can be modified to my satisfaction. Great refreshing treat;o)

Claudia, I too have had some awful experiences with stevia. Thankfully I have found found a few go-to brands that taste great and satisfy my sweet tooth. Most folks I know like NuNaturals the best. if you do try it again, I suggest you try a few of their products. You all ready know this from regularly reading my posts….but here is the info in one place. They are VERY sweet so a little goes a long way. If you ever try it I hope have you have good success….but make sure you buy it some where you can return it if you don’t. I agree that the wrong ones can be stomach turners. I keep far away from those. xo

Nicole, Stevia has become our go-to sweetener in this house. As you know my ingredients are meant to serve as an inspiration and a guide. If you dig maple, honey or something else go for it. xxoo

These look very tempting to “whip” up! But I am in Palm Springs for the week and sworn off cooking. Of course I am also supposed to be staying away from the computer and you see how well that is going. Besides parfaits are not really cooking. Right? GREG

Gosh I wish my daycare kid would eat something like this! The 4 year old won’t eat any kind of berry at all, no yogurt except go-gurt and she complains because I buy “simply gogurt”! Yesterday I took a blueberry yogurt and sliced up an apple and made a “blossum” out of the apple and then she could dip it in the yogurt. She asked me when she got to eat breakfast…. huh? I offered a cantelope or an apple for morning snack and I got “the lip” (elvis style) and that was the end of AM snack (they eat at school for breakfast – I just give them a morning snack since they come at 6:50 am and don’t eat until 8:45 or 9:05). Oh well…. I would love this!
