Are you having a picnic, grill fest or potluck for July 4th? If your answer is yes or no this yogurt berry parfait will tempt your sweet buds no matter what. It will also help keep your healthy eating in check. This yogurt parfait is a sweetly satisfying alternative to heavier desserts. With raspberry and blueberry sauces it is sort of like a ice cream sundae, but the yogurt version.
With the abundance of all kinds of sweet and juicy fruits in the markets I had to highlight their star status in these creamy parfaits. We should all give credit where it is due, right? Berries are my favorite fruit. I love their sweet tart flavor and the fact that they are all ready in bite sized pieces.
Summer has been excellent so far. We have been enjoying time as a family. I have been loving more time for recipe development & creativity as I am not on the road to the kids school 3 hours a day! I just got back from Boulder, CO from a two day photography workshop called Food and Light. Our teachers, White on Rice Couple, Tartelette and Use Real Butter were unbelievable. People love to interact with their food, especially dessert. You can serve these parfaits pre-assembled or your kids and/or guests can make their own. They can take as much or as little as they want. Think ice cream dessert bar….just a few less calories. You can go with small “shooter” sized portions, or bigger ones like these.
- 2 cups fresh Raspberries + some additional for garnish
- 2 cups fresh Blueberries + some additional for garnish
- Vanilla Stevia Drops (or your favorite natural sweetener) to taste
- 6 ounces per serving non-fat Thick Greek Yogurt
- a few teaspoons cornstarch to thicken berry sauces if needed
- optional: orange or lemon zest garnish
- In two separate sauce pans heat berries with 2 tablespoons water in each. Bring to boil over medium high heat. Stir each. Reduce heat to medium, cover and let simmer about 6 minutes until berries become saucy and most have burst open. Remove from heat and purée in a blender. Add a pinch of cornstarch or arrowroot to thicken if desired. Sweeten to taste with stevia.
- Add stevia drops to yogurt if desired. Layer sauces and yogurt, making a pattern of yogurt and saucy stripes. Top with additonal berries and zest if desired.
- Serve your sauce as thick or thin as you wish. Thicken with cornstarch or arrowroot or use more or less water.
- You do not have to sweeten the yogurt, the berry sauces might be sweet enough for you. Taste a little bit of the yogurt & berry sauce together before you sweeten the yogurt. You also can go without any additional sweetener.
- You will end up with about 5 ounces of raspberry sauce and about 10 ounces blueberry sauce. Use more or less berries depending on your preference.
