Happy Post Wrap-up: Summer Food Inspirations

You guys wowed me with your Summer Happy Post link ups. You certainly spread the cheer by popping over and adding so many great links. Stay tuned….periodically I will publish Happy Posts. I figure things that strikes my fancy might make you smile too. Hosting a virtual party by sharing links makes it all the more fun.

I was dazzled by this post by Food, Football and a Baby. Michelle made David Lebovitz’s Classic Vanilla Ice Cream and then topped it with Fresh Cherry Drizzle Sauce. The name of the recipe in and of itself is a pleasure. You can dash to her blog for the recipe. Look at the gorgeous photo of her sweet daughter picking cherries…

OK, you also need to gawk at the ice cream. Really.

This “Spaghetti” from Perry’s Plate is actually zucchini! Natalie topped it with pesto sauce, bits of smoky bacon and broccoli florets. Yes, I did say bacon. You might want to make this one pronto!

Sweet little Banana Coconut Ice Cream Sandwiches via Sumptuous Spoonfuls…need I say more? Ann made these for National Ice Cream Sandwich Day.

In her About page she wants you to know this ~ “I am not a chef–actually, I am an engineer. I just love to cook, and I love to share what I cook with my friends.” Thanks for putting on your chef’s hat Ann!

This Easy Strawberry Sorbet by Cookin’ Canuck looks like the perfect summer treat. Light, refreshing and as she says easy.

All this little number takes is 3 ingredients: strawberries, sugar and lemon juice. Thanks Dara!

Two cookie recipes that caught my eye are these Strawberry Shortcake Cookies by Susan at The Urban Baker and Almond Cookie Crisps from U Try.it

Fresh fuzzy peaches define the warmer weather months and these Peach Pecan Muffins by Ingredients Inc. and Peaches and Cream in Pistachio Phyllo Cups by the gals at Apron Strings highlight the fruit beautifully.

Fruit pies are always a hit! Check out these cute little Individual Lattice Top Berry Pies by Kristina Vanni at Better Recipes and this Fresh Raspberry Pie from Dorothy at Shockingly Delicious. Tempting huh!

Here are a few summer savories before we get back to sweets….

Mountain Mama Cooks shared her Favorite Tomato Sandwich and Jeanette’s Healthy Living has a fresh and light Tuna Marinara with Pasta (love those teeny tiny shells) Both of these recipes use the abundance of summer produce and are super healthy eats. Thanks ladies!

Two ridiculously AMAZING pancake recipes. Apple Pie Pancakes a la Mode via Feast on the Cheap (I am having a hard time grabbing that photo for you)

And Vibibis Rice and Coconut Pancakes by Sips and Spoonfuls How gorgeous are those!
