There she is Lady Liberty. Perched on a muffin with a coconut dress. Standing tall to honor peace and freedom. Today we all reflect on a day where our world was vandalized. Today we come together to remember, heal, hug and love.

It has been a decade since the horrific 9-11 terrorist attacks. Earlier this week I asked us to bake Remembrance Cakes. Cakes to share love, thoughts and prayers for lives lost. You guys have given true emotions and support for the folks who need it most. You are all amazing!

What were you doing when you heard about the tragedy 10 years ago? What are you doing today to honor and support? We will eat cake and share lots and lots of hugs…..

You know I can never decide whether to call something a muffin or a cake because a muffin is essentially cake. Lady Liberty looks nice standing tall on pillows of freshly whipped cream…

I made layered chocolate and vanilla muffins to symbolize the darkness and light that we face in life. Happiness is found in the light and somewhere in between. Darkness is made a bit lighter here with chocolate.

As soon as I thought about the idea to post Remembrance Cakes I went on a search to find some cupcake toppers. I was tossed between sweet angels and these New York City toppers. NYC won, I thought the Statue of Liberty is a bit of an angelic gal. She protects the city and it’s people with her torch.

Even though the 9-11 attacks invaded our whole nation & world, these little symbols of life in NY show a vibrant community. A strong place where people live life. Today they will honor loved ones lost forever.

My contribution are  these little gluten free cakes. Simple to make and even easier to enjoy. I topped ours with some candied orange peel and freshly whipped cream….

Gluten Free Chocolate Vanilla Muffin-Cakes

Serving Size: 1 muffin

Gluten Free Chocolate Vanilla Muffin-Cakes

*If you choose to make mini muffins simply adjust the baking time and start testing earlier.

Ingredients

  • 1/2 cup (74 grams) Gluten Free Oat Flour
  • 1 cup (118 grams) Blanched Almond Flour
  • 1 teaspoon Baking Soda
  • 1/4 teaspoon fine Sea Salt
  • 4 ounces Egg Whites
  • 1/2 cup unsweetened light Coconut Milk
  • 3-4 droppers full of Vanilla Stevia Drops adjust to taste
  • 1 teaspoon pure Vanilla Extract
  • 2 tablespoons unsweetened Cocoa Powder
  • Optional Ingredients
  • Candied Orange Peel
  • Chocolate Chips
  • lightly sweetened Whipped Cream or Cream Cheese
  • chopped Nuts

Method

  • Pre-heat the oven to 350 degrees F with the rack in the center. Prepare a standard muffin tin with liners.In a medium bowl, whisk together oat flour, almond flour, baking soda and sea salt. In another bowl whisk together egg whites, coconut milk, stevia drops and vanilla extract. Combine wet and dry ingredients well to form a batter. Divide the batter in half and stir the cocoa powder into one of the batter bowls. Adjust sweetness if needed.
  • Take a spoonful of chocolate batter and place one in each muffin cup (fill a little less than 1/2 way.) Top each chocolate layer with a spoonful of vanilla batter. Leave some room at the top of the muffin cups for expansion.
  • Add optional toppings, candied orange peel, nuts or chocolate chips. Bake muffin cakes for about 18-20 minutes or until a skewer comes out virtually crumb free.
  • Serve with whipped cream, cream cheese, melted chocolate, nut butter or simply a glass of milk.
