Hi Georgia, this chicken is a fun twist on the classic loaf. Admittedly I LOVE all kinds of meatloaf….my kids on the other hand can be a bit pickier with it!

I’ve been in search of a role model for how to photograph meatloaf (one of my favorite foods) for a long time, but up until now didn’t see any that impressed me. Congratulations, you did! I’ve done an all-beef, pork with pancetta, and bison-bulgur meatloaf, but never chicken, so will definitely try your recipe.

believe it or not, my kids do like my meatloaf! Generally, I use turkey, but I like the idea of swapping out the chicken. I am sure this tastes as good as it looks!

Seriously… micro greens just make everything better. Meatloaf is not a very photogenic food (I’ve tried and failed) but you’ve made it pretty.
