You know what I love most about roasted beets? Their versatility and unique sweet/earthy flavor. I enjoy that they are the perfect stand alone side dish or awesome tossed into your favorite salad. They add a nice flavor and healthful twist to shakes and smoothies too…

I am going to keep things brief today as I am bopping all around Telluride enjoying inspiring movies, talks and gallery walks at MountainFilm 2012.

Telluride is as charming as always and I can’t wait to be here all summer long.

Back to beets….I roasted these with a splash of freshly squeezed orange juice and my favorite oil these days, unrefined coconut oil. Be sure to roast your beets until they are well softened. They are not as fun to bite into when too firm. Besides, all of their natural sweetness presents itself when they get lots of time in the oven.

The simple quality of the recipe shows you how few ingredients need to go into something for perfection. You will see these beets show up in a lot of my upcoming recipes so stay tuned!

How do you like to prepare beets?

Citrus Coconut Roasted Beets

Rating: 51

Prep Time: 5 minutes

Cook Time: 40 minutes

Total Time: 45 minutes

Yield: 2-4 servings

Citrus Coconut Roasted Beets

Ingredients

  • 1 bunch of Beets, cleaned, peeled and chopped into quarters
  • 1 tablespoon fresh Orange Juice
  • 1 tablespoon melted Unrefined Coconut Oil
  • a few pinches of fine Sea Salt
  • Orange Zest
  • Optional
  • a splash of nutty oil (Walnut, Hazelnut, Pistachio or more Coconut Oil) to finish

Method

  • Pre heat oven to 400 degrees F with the rack in the middle. Toss beets with oil, orange juice and sea salt. Arrange in a single layer on a rimmed baking sheet sheet or casserole dish. Roast 20 minutes and flip beets over so they roast evenly. Roast an additional 20-25 minutes until beets are tender. Garnish with some orange zest before serving.
  • Notes
  • Roast a few bunches of beets at a time. They last a while in the fridge. Add enough oil and orange juice so they are glistening.

I will eat beets, but I don’t yet love beets. Must be because I’ve only had canned beets….I know…yuck. I love roasting things in the oven and I’m not sure why I haven’t tried beets yet. I must.

This is a great recipe to really showcase the natural flavor of beets, but with a little twist! Lovely colors, too! Thanks for sharing, Marla. Hope you have a great day in Telluride!

Beets and coconut oil is seriously one of the best, simplest, most awesome things. The beets get sweet and caramelized and the coconut oil is awesome. I never knew how amazing beets were til about 7-8 years ago. I grew up thinking I didn’t like them (til I figured out how to make them). GREAT recipe!

Me too Averie. A lot of folks dislike beets because first experiences are often out of the can. *gasp* Thankfully we know better now :) Hope you are having a great long weekend!

What a great flavor combination. Beets are so pretty. Red yellow or purple.
Raw, grated in a salad or roasted (my favorite)
Hope you are having a fabulous weekend!!

We always cook our beets with orange nowadays but we always have them hot as my husband is not keen on cold beet. Delicious. Diane

Yum! I absolutely love beets, and have to have them on my salad every day. It’s like a meltdown situation if the grocery store is out of them. I will have to try them this way next time!
