Pumpkin has been my whole world lately. This time of year has me jazzed to use my favorite ingredient in everything! We adore this orange beauty in sweets, savories and everything in between. There is nothing like starting the day with hearty steel cuts oats in this Pumpkin Breakfast Bake with Streusel Topping.

Ok guess what I have coming Monday morning…an overnight pumpkin breakfast bake. Just telling you now…lol I’ve had it sitting in my drafts for a month and figure I better post it before pumpkin season is over.

Marla, anything with streusel just vanishes at my house. My teens would go crazy if they would wake up to such a breakfast streusel treat. (Maybe that would eliminate the teen moodiness,too). :-)

I agree with you Kirsten, there is a certain kind of magic in a streusel topping. A little crisp, crunch and sweetness is undeniably happy food. Anything to cut down on teenage moodiness would be a great bonus! Hopefully this works out for you ;)
