Wow! Thanksgiving is just over one week away. Can you believe that? I am thankful to celebrate this foodie holiday with family, friends & YOU!

I developed this healthier version of a traditional holiday side dish using super crunchy Erewhon Corn Flakes cereal instead of the usual marshmallow topping ~ the results…AMAZING! You have gotta try Sweet Potato Casserole with Crispy Corn Flakes Topping as soon as you can.

As a matter of fact, do a test drive in the next few days before Turkey Day. Enjoy for breakfast, lunch, dinner, snacks and in your lunchbox too.

This looks so good! But for some reason, the corn flakes is giving me the vibe that this should be eaten for breakfast. :)

Love the addition of riccotta – I bet it is so moist and light. Need to try this!

18 Marla November 15, 2012 at 6:37 pm

Liz, the ricotta certainly adds a lightness and a bit of texture too.

I am originally from the midwest, where we like to top all of our casseroles with corn flakes, rice krispies, or French-fried onions. So obviously, I just love this. Amazing!

21 Marla November 16, 2012 at 7:22 am

Kiersten, the rice krispies are genius. As are the french fried onions….
