‘Tis the season for peppermint! This cool and creamy shake will delight your tastebuds. You can keep it clean or dirty it up with your favorite holiday cheer….do what you wish.
Spiked or not, sip a creamy milkshake that is also a skinny treat!
If you are anything like me then you crave cold and creamy shakes no matter what the season
When styling, for a split second I was going to top these shakes with crushed candy canes. That would have been pretty and all, but I wanted to keep these beauties sugar free.
I love pomegranate arils (seeds) they are like little gems…
Thankfully I just got a huge shipment of fresh pomegranates from my friends at POM.
They were the perfect finished touch ~ and also have that red + white Christmas feel.
As much as I like pomegranates I LOVE plaid. Really, my closet is full if it. See, this is my new favorite…
I would tell you to leave a Peppermint shake for Santa, but it might melt all over before he gets to your home.
Make sure to put a cloud of Peppermint Vegan Whipped Cream on the top of your shake.
You could also top this shake with my chocolate cream ~ that would be amazing!
What is your favorite drink these days?
- 1 cup (8 oz) unsweetened Vanilla Almond Milk
- 1/2 cup (4 oz) unsweetened light Coconut Milk
- 1-2 droppers full Peppermint Stevia Drops or 1/2 teaspoon Peppermint extract and sweetener of choice
- 1 cup Ice
- Pomegranate Arils
- 2 cans (28 ounces) Full Fat Coconut Milk
- 2-3 droppers full Peppermint Stevia Drops or 1 teaspoon Peppermint extract and sweetener of choice
- Add some light rum or cheer of your choice!
- Combine all ingredients in a blender top and with pomegranate seeds.
- Chill coconut milk in your refrigerator overnight undisturbed. Remove from the fridge and gently turn the can upside down, but be sure not to shake it. Open the can and remove all of the clear coconut water (you can save this for shakes and drinks.) Put the thick cream in your mixer bowl, whip a bit until it starts to firm up. Add the peppermint stevia drops and whip until you have soft fluffy peaks.
- If your coconut cream is all ready very thick you can put all the ingredients in the mixing bowl at one time.
- Coconut milk tends to vary from one brand to another. Some thicken to a dense cream quickly, others take more whipping to get peaks. Experiment with different brands to get the texture you prefer. I love them all!
