What?? Nachos made with thinly sliced potatoes instead of corn chips? Yup! Until now I had never had such a thing. Now I am hooked. Thanks to my great pal Gaby Dalkin from What’s Gaby Cooking and her new cookbook Absolutely Avocados ~ I now have plenty of new recipes to explore. All which use one of the the best ingredients on earth….avocados!

Are you a fan of avocado? Did you know that this creamy fruit (not vegetable) can be used in all kinds of sweet and savory year-round recipes? Sometimes you can tell right away that it’s in a recipe, other times it’a an ingredient that acts a bit more stealth.

In the case of these Irish Nachos, mashed avocado is the crowning star….

If avocados have ever confused you this book will demystify and quell any questions, thoughts and concerns.

Absolutely Avocados | cookbook by Gaby Dalkin | FamilyFreshCooking.com

Gaby is obsessed with everything avocado and she has become a go-to avocado diva. It takes a connoisseur to write a book with 80 avocado recipes for every meal of the day.

I hear Gaby’s fun and enthusiastic voice in the forward and every recipe header. I know she had a blast developing these recipes & writing this book. Gaby is a pro in the kitchen & was professionally trained in culinary school. Her recipes were all rigorously tested so you can be sure of success in your kitchen!

If you are a food photo junkie like me then you will swoon at the photos taken by sizzlin’ Matt Armendariz (Matt Bites) and styled by the fabulous Adam Pearson….a dynamic duo.

I chose this recipe to share with you because it jumped out at me…leapt off the page and begged me to re-create it in my kitchen.

What makes Irish Nachos so special? First of all they are perfect for breakfast, brunch, lunch, dinner or any time at all. The potatoes are sliced real thin and baked until soft in the oven. While that’s doin’ you sizzle up some finely chopped onions and bell peppers. Then you slap bacon in that very same pan…nuff said right?

Oh wait it gets better ~ then you mash up the avocado and make an almost guacamole kinda deal. You set the avocado mash & the crispy, smoky bacon aside…for just a few minutes…..don’t worry.

And then you layer the potatoes, veggies with a big fist full of cheddar cheese. Set the skillet back in the oven ~ let everything get all melted and gooey. Pull it out & top with the bacon and avocado.

Serve your Irish Nachos in the skillet ~ your family and guests will be wowed with it’s beauty and flavor! Pinky promise.

I have not been about to keep my mind off of Irish Nachos now that I discovered them. Thanks Gaby!

  • Avocado Superfood Smoothie
  • Avocado Stuffed Potato Skina

Irish Nachos

Rating: 51

Prep Time: 10 minutes

Cook Time: 1 hour

Total Time: 1 hour, 10 minutes

Yield: 6-8 servings

Irish Nachos

Ingredients

  • 4 large Red Skinned Potatoes
  • 3 tablespoons Extra Virgin Olive Oil
  • 2 teaspoons Garlic Powder
  • 2 teaspoons Sweet Paprika
  • 1/2 Red Bell Pepper
  • 1/2 Yellow Bell Pepper
  • 1 medium Yellow Onion
  • Coarse Salt and freshly ground Black Pepper to taste
  • 5 strips Bacon
  • 1 cup shredded Cheddar Cheese (Gaby calls for 2 cups)
  • 2 Hass Avocados
  • 1 tablespoon Lemon Juice
  • 1/2 cup thinly sliced Scallions
  • Sour Cream, for serving
  • Salsa, for serving

Method

  • Preheat the oven to 400 degrees F with the rack in the middle. Carefully cut the potatoes into 1/4 inch slices. Rinse them in cold water and dry both sides with a clean dish towel.
  • Add the potatoes to a large bowl, drizzle with 2 tablespoons of the olive oil, garlic powder and paprika. Toss to combine. Arrange the slices partly overlapping one another in a 12 inch cast iron skillet. Transfer the skillet to the oven and bake potatoes for 40 minutes, until golden brown and cooked through.
  • While the potatoes are baking, thinly slice the red pepper, yellow pepper and onion into 1/4 inch pieces. Add the remaining 1 tablespoon of olive oil to a large skillet over medium high heat. Add the peppers and onions. Cook stirring occasionally, until the onions are translucent ~ about 5 minutes. Remove the mixture from the skillet & set aside.
  • Add the bacon to the skillet and reduce the heat to medium. Cook the bacon until golden brown and slightly crisp, turning half way through. Transfer the bacon to a paper towel-lined plate and let cool. Break the bacon into 1 inch pieces and set aside.
  • Once the potatoes are cooked, remove the skillet from the oven and add the pepper & onion mixture on top of the potatoes, followed by the cheese. Transfer the skillet back to the oven for 5 minutes to melt the cheese.
  • Once the cheese has melted, remove the skillet from the oven and sprinkle the bacon on top.
  • Cut each avocado in 1/2 lengthwise. Remove the pit from the avocado and discard. Scoop the avocado flesh from the skin, and place the avocado flesh in a medium bowl. Mash the avocado together with the scallions and lemon juice, season with salt and pepper. Add the mashed avocado on top of the nachos and serve immediately with sour cream & salsa, if desired,
  • Note
  • This recipe is from the Absolutely Avocados cookbook by Gaby Dalkin. Tiny adaptations have been made to the recipe source.
  • Serve as you would a large pie, cut into wedges.

I’ve been doing a ‘dumbed down’ version of this for years. In high school home ec (egads! Am I that old?) one of the things we learned to make was Potato Nachos. Just thin slices of potato nuked until tender, topped with salsa & cheese and nuked until the cheese melts. I rather like the look of this more grown up version. I’ll have to give it a try.

Best Irish Nachos I’ve had are made with corned beef. You can use leftover corned beef or go get some lean deli sliced. Just cut up in small pieces, crisp up a little bit and add. I’ve had these many times at this Irish pub in my town. You’ll love them. Oh, no bell pepper either.

I just made these tonight for my girlfriend and I and we loved it!!!!! Made a few changes though…. we didn’t have a cast iron skillet so we just fried them in our little deep fryer. We also just bought a container of guacamole from the store and used fresh green onions from the garden! We also just layered all of the ingredients on our plates instead of cooking them all together in the oven. We didn’t use any seasonings just all natural ingredients and it was sooo yummy!!! Definitely making this a new add on to our dinner rotation!!! Thanks a lot for this awesome Gluten free recipe!! So grateful to find this! <3
