Hello! Hope you all had a lovely long Labor Day weekend. We sure did over here.

Time to pack those lunch boxes. Today is day 1 where I pack lunches for you (& us) every school day for the month of September. Stay tuned for lots of giveaways & prized throughout the month. (Something tomorrow actually!)

Eggs are versatile, healthy & budget friendly. They are an ingredient that goes way beyond breakfast.

Our sides are Marcona almonds & freeze dried bananas. Lunch is packed in Easy Lunchboxes.

Veggie Scrambled Eggs

Cook Time: 5 minutes

Total Time: 7 minutes

Yield: 1 lunchbox

Veggie Scrambled Eggs

Ingredients

  • 2 large Eggs, whisked with a splash of water
  • handful Baby Spinach
  • sliced Green Onion
  • chopped Tomato
  • Parmesan Cheese
  • Garlic Salt
  • Cracked Black Pepper
  • Cooking Spray
  • Sides
  • Freeze Dried Bananas
  • Marcona Almonds

Method

  • Spray & heat a small non stick sauce pan over medium heat. Scramble eggs quickly, stirring the entire time with a spatula. They will stay creamy if you keep working them. Half way through cooking add spinach, tomatoes & green onion. Stir to combine. Add cheese & season to taste.
