Salmon Scrambled Eggs

Prep Time: 5 minutes

Cook Time: 5 minutes

Total Time: 10 minutes

Yield: 2 servings

Salmon Scrambled Eggs

Ingredients

  • 6 large Eggs
  • 1/4 cup Half and Half
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 2 tablespoons Butter
  • 2 ounces Smoked Salmon
  • 1 tablespoon Chives (or other herbs), finely chopped

Method

  • Crack the eggs into a fine mesh strainer set over a bowl. Use a spoon or ladle to force the eggs through. Add the half and half, salt and pepper to the bowl, whisk gently to combine.
  • Melt the butter in a nonstick skillet over medium-low heat. Pour the eggs into the skillet. As the cook, slowly an gently push the egg mixture around with a wooden spoon or rubber spatula. Give the salmon a rough chop. When the eggs are 1/2 way done add the salmon into the skillet. Stir the eggs around to cook them a little bit more. Sprinkle on the chives or herbs and serve while they are still hot.
  • This technique assures that the eggs are creamy and perfect!

Favorite thing to make – a no fail prime rib; artisan breads and peanut brittle. My favorite thing to cook for any Holiday gathering or family gathering is a recipe taught to me by my husband’s teenage daughter Elizabeth, from Mexico. she was taught by her Mother and Grandmother, also from Mexico. Enchiladas. I like doing all the prep work ahead. Shredding cheese, if not bought preshredded. Cutting onion, minced, pre boiling and peeling and chopping potatoes. Precooking and shredding chicken breasts. I buy canned El Paso Enchilada sauce, I like red mild so all family can enjoy together. I lay out and assembly line with cookie sheets. Heat oil and dip quick quick flour tortillas into ans out of the hot oil. Then dip them quick quick into and out of the heated Enchilada sauce. Then the assembly line. I do half onion, cheese, potato and the other half I add shredded chicken spareingly. I use different size flour tortillas to tell apart. Then I bake in oven to heat through and meld all ingredients. They are so good the next three days. Family take home their share and we enjoy for many meals together.

This will go great with my other Pioneer Woman books. I remember calling my mom and finding out just how close she was in Dallas to where Ree would be signing books? She got there about 3:00 and didn’t leave until 1:30 am, she got the entire family autographs: hubby, kids, and all….I’ll treasure it forever!!!

My hubby’s birthday is December 1st, and he doesn’t like cake, but he LOVES pumpkin pie, so I always make him one for his birthday and usually one a week for the month of December as a month-long birthday “treat”.

Time with family, all the good food from appetizers to goodies.
We get the sleds, inner tubes and snowmobiles out and give the kids rides all day. So much fun and all the kids have a blast :)

Homemade raviolis is my favorite to make! Our recipe is my Husband’s Grandmothers recipe! They are delicious and there is nothing like homemade raviolis with Spinach, parmesan cheese, chicken and pork, ricotta, nutmeg! They are so delicious! We will make about 175 to 200 raviolis! I have a recipe for what we call “Thel” bars that my mother-in-law got from a little 87 year old lady by the name of “Thel” in Whitesboro Texas over 35 years ago and we all just love them. They are made from graham crackers, coconut and lots of butter. The whole family just loves them and sometimes even hides a stash for later.

My son is 20 years old with Autism and he loves your show. He will say every day, Mom we have got to try this, it looks so goood. Mom Ree said it goods. “Look it up Mom, Look it up Mom,” and then I’m usually headed out to the store to find everything to try one of your special recipes. He keeps telling me, Mom I want to be a chef one day, and I tell him, you are baby, your are. I ordered the Food From My Frontier. Is there anyway to get one of your new one’s with your signature on it. I would be happy to buy it.

I love making Christmas dinner……. It is the one time of year we have prime rib (with horseradish sauce), and I usually serve it with some kind of potatoes and a crispy green salad with oranges, avocado, red onion, and vinaigrette. Dessert varies. This year, it will probably be a fresh apricot pie that I have par-baked in the freezer or a small salted-caramel chocolate cake from my local French bakery.

Ree makes the best dough for cinnamon rolls, its a huge batch, so plenty to go around, and the fillings can go from savory to sweet, I made candied ginger/tangerine, cinnamon/brown sugar, bacon/maple, maple/apple, pumpkin butter, sweet potato butter, and pecan. I also spooned some into my popover pan and baked it off, it was so plush and heavenly.

I love the feeling you get of making a special and delicious creation of foods and deserts that all my friends and family can enjoy. All dishes that I make are filled with love. I love the feeling I get when someone tastes my food and they say its delicious which makes me feel accomplished and wanting to cook something that is even tastier and better then the first dish.

I do the Thanksgiving turkey dinner and my sister does the Prime Rib Christmas dinner (at my house). So that leaves me plenty of time to bake some cookies. My favorites are Russian Teacakes ( with pecans) and of course the cut out and frosted Sugar Cookies. My dear MIL used to make the best Chex Party Mix. I’m going to search for her recipe if I have any extra time.

The holidays aren’t complete without making enough pierogi’s to last my family of 4 a year. My husband and I will spend two days making the fillings, dough, and then assembling the pierogi’s. It’s a nice bonding experience, and something we hope our kids can help out with when they’re old enough.

My favorite thing to make for the holidays are chocolate covered fruits, oranges, pomegranite seeds, berries, etc. Use a high quality dark chocolate and sprinkle with a couple grains of sea salt and you have a easy healthy treat.

My favorite thing to make for Christmas is a French toast casserole for Chirstmas breakfast. I make it up the night before and let the bread soak up the egg mixture. I add a little bourbon as well as some raisins, chopped apples and nuts. When it cooks it puffs up and makes a nice breakfast with very little work.

HI.
My favorite thing to cook for the holiday season is really to bake and its holiday cookies, cakes, and pies..I can get creative.
MY favorite thing to eat is my families traditional southern cornbread dressing and collard greens. YUM YUM.
