Piña Colada Steel Cut Oatmeal

Ingredients

  • 2 cups Steel Cut Oats
  • 2 cans (40 ounces) Pineapple Chunks in natural juices (use the juice in this recipe)
  • 2 cans (27 ounces) unsweetened Coconut Milk
  • 1/4 cup Dark Rum (light rum OK too)
  • 1/2 teaspoon Salt
  • 2 tsp Vanilla Bean Paste or extract
  • Honey to taste
  • Toppings
  • Dried Coconut
  • Dried Pineapple
  • Macadamia Nuts
  • Golden Raisins

Method

  • Combine all ingredients in a large dutch oven. Bring to a boil and simmer for about 30 minutes until oatmeal is creamy, stirring often. Add water to thin out if necessary. Sweeten to taste with honey (or your favorite sweetener.)
