Traditionally the ingredients in a piña colada include the following: rum, pineapple & cream of coconut.

You have that all right here. Plus steel cut oats & some healthy toppings like coconut flake, dried pineapple, nuts & golden raisins. A little bit of rum in this recipe only adds flavor. It’s not boozy tasting at all.

Piña Colada Steel Cut Oatmeal

Ingredients

  • 2 cups Steel Cut Oats
  • 2 cans (40 ounces) Pineapple Chunks in natural juices (use the juice in this recipe)
  • 2 cans (27 ounces) unsweetened Coconut Milk
  • 1/4 cup Dark Rum (light rum OK too)
  • 1/2 teaspoon Salt
  • 2 tsp Vanilla Bean Paste or extract
  • Honey to taste
  • Toppings
  • Dried Coconut
  • Dried Pineapple
  • Macadamia Nuts
  • Golden Raisins

Method

  • Combine all ingredients in a large dutch oven. Bring to a boil and simmer for about 30 minutes until oatmeal is creamy, stirring often. Add water to thin out if necessary. Sweeten to taste with honey (or your favorite sweetener.)

Sometimes it doesn’t hurt to occasionally have a little alcohol in the morning, especially on the weekends, and it doesn’t even have to cook out. :) What a refreshing take on an oatmeal recipe – and, I love steel cut oats too!

Having just returned from the Caribbean, (Punta Cana) I want to keep those island flavors going! This oatmeal would just make my day in the morning! And with the flavor of Meyer’s Rum? My favorite!! I have a bottle all ready to go in the cabinet! ;) Great recipe Marla!
