I cooked this quinoa with some Star Anise…because I think it’s pretty & I like the subtle licorice flavor.

Raspberry Lovers Quinoa Breakfast

Prep Time: 5 minutes

Cook Time: 25 minutes

Total Time: 17 minutes

Yield: 6-8 servings

Raspberry Lovers Quinoa Breakfast

Ingredients

  • 2 cups Quinoa, rinsed & use 1/2 cup water LESS than package directions
  • 3 cups Frozen Raspberries, thawed
  • 1/4 cup fruit sweetened Raspberry Jam
  • 4 Star Anise
  • Pince of Sea Salt
  • Toppings
  • Fresh of Frozen Raspberries
  • Chopped Roasted Pistachios
  • Raisins
  • Yogurt
  • Raspberry Jam

Method

  • In a large saucepan bring all ingredients (not toppings) to a boil over medium high heat. Reduce heat to a simmer and cook until all of the liquid is absorbed, about 20-25 minutes, stirring frequently. Add more water if needed. Remove star anise & discard.Serve immediately & add toppings if you wish. Sweeten to taste.
  • Notes
  • I like frozen raspberries in this recipe. They have lots of flavor & plenty of juices to cook with the quinoa. Flavors really sink the quinoa as it cooks.

Gorgeous raspberries! I just made a rasp dessert yesterday but I used frozen…LOL I can’t wait til fresh rasp aren’t an arm and a leg $ and I can make this with fresh! So pretty – pinned!

I keep going back & forth on quinoa. For some reason I think I should like it. I mean, it’s not that different from millet & bulgur wheat, right? But of all the recipes I’ve tried, I only like one. So far. I could see trying this. I do love fresh fruit.

Hopefully we can get you to love quinoa too! Be sure to rinse it before you cook it….some have a bitter taste if you don’t do that.
