If you have some of that ready to go then these cocktails will take seconds to create.

If you have none on hand make a big batch so you can use it for cocktails, ice cream sauce & pancake topping.

You can also omit the alcohol in this and make some mocktails. If you wish.

Frozen Rhubarb Daiquiris

Total Time: 5 minutes

Yield: 2 Frozen Rhubarb Daiquiris

Frozen Rhubarb Daiquiris

Ingredients

  • 2 cups (16 ounces) Rhubarb Honey Compote
  • 1 tablespoon fresh Lemon Juice
  • 4 ounces Light Rum
  • 1 cup Ice
  • garnish with fresh Mint

Method

  • Blend all ingredients in a high power blender. Sweeten to taste if needed. Garnish with fresh mint.

This is the first recipe I see with rhubarb in a drink. Usually I am eating rhubard in a compote or muffins. This drink would be great to start the week-end!
