Sometimes there are random ingredients in the house. Ones I’ve never thought to put together in one recipe. Carrot? Blueberry? Sure ~ why not right?

In these Blueberry Carrot Frozen Yogurt Popsicles I use frozen blueberries, carrot juice, thick Greek yogurt.

Blueberry Carrot Frozen Yogurt Popsicles

Prep Time: 5 minutes

Total Time: 4 hours

Yield: 24 ounces of pop mix (Six 4 ounce popsicles)

Blueberry Carrot Frozen Yogurt Popsicles

Ingredients

  • 1 1/2 cups fresh or frozen Blueberries
  • 1/2 cup (4 ounces) Carrot Juice
  • 1 1/2 cups Fat Free Plain Greek Yogurt
  • 1/4 cup Honey

Method

  • Whisk together carrot juice, yogurt & honey in a bowl. Gently mix in blueberries. Fill popsicle molds and freeze undisturbed 4 hours to overnight. Release pops from molds & enjoy!

The Blueberry Queen is at it again :) LOVE this and the idea! And that Dates crate, love the vintage flair. Love the styling on these (and you’re unbelievable that you can shoot these and not have 1 drop of meltiness…you must work so fast! I..do not…LOL) Pinned :)

Averie, can’t believe you noticed (well actually I can) that about the melt ~ or non-melt. I couldn’t believe it either. Like you I take quite some time with these shoots. Must have been magic yesterday when I shot these. That crate was buried under my props. I’m so glad I found it! xo
