Sometimes there are random ingredients in the house. Ones I’ve never thought to put together in one recipe. Carrot? Blueberry? Sure ~ why not right?
In these Blueberry Carrot Frozen Yogurt Popsicles I use frozen blueberries, carrot juice, thick Greek yogurt.
I can safely say that most of us adore everything blueberry…especially in the summer time.
These popsicles are sweetened with pure honey.
They are like a healthy smoothie in a pop. We love having cool & creamy licks on steamy summer days.
Yogurt adds some protein too!
Aren’t these sailboat pop molds so fun?! I squealed with happy when I saw them in the store ~ for realz.
- 1 1/2 cups fresh or frozen Blueberries
- 1/2 cup (4 ounces) Carrot Juice
- 1 1/2 cups Fat Free Plain Greek Yogurt
- 1/4 cup Honey
- Whisk together carrot juice, yogurt & honey in a bowl. Gently mix in blueberries. Fill popsicle molds and freeze undisturbed 4 hours to overnight. Release pops from molds & enjoy!
