Udi's Gluten Free foods and Nom Nom Truck

It was a fun day at the Natural Products Expo West with Udi’s Gluten Free Foods. Myself and a group of bloggers were invited to the giant natural foods show in Anaheim, CA. Above with me is Jen. You might have seen her on the Food Network show The Great Food Truck Race. She is one of the Nom Nom girls.

We learned all about Udi’s wonderful line of products and toured the show. We also enjoyed gluten free Banh Mi sandwiches at the Nom Nom Truck. Banh Mi is a Vietnamese sandwich served on a baguette. The fillings can include thinly sliced pickled carrots, daikon, cucumbers, cilantro, chili peppers, pâté, mayonnaise and various meat fillings or tofu. I had the pork and the tofu. The pork was by far my favorite.

Udi’s is proud to announce their new line of gluten free hot dog and hamburger buns which will be perfect for summer grilling. Now everyone can enjoy a big juicy burger, banh mi or hot dog with a soft fluffy bun.

Karen Fine from the blog Mom Cooks Gluten Free shared a vibrant presentation about feeding our children foods with great flavors, health and enthusiasm. She had some wonderful tips on food presentation, combinations and packing lunch boxes.

Maryea: Banh Mi is a fun & fresh combo of ingredients. The spices mix so well with the meat s& tofu, the fresh veggies add crunch and the bread ties it all together. The marinades they use are awesome! Girl, you gotta try it sometime.
